Green Bean and Potato Salad Recipe

Submitted by: Jessica, TN

This is a tasty green bean and potato salad recipe that I use for lunches and side dishes. It is tasty and by boiling potatoes the night before, can be done real quick the next day. I usually prepare a lot of precooked and cut potatoes that I store ready to use. For my green beans I prefer to steam them with no flavoring.

Green Bean and Potato Salad Recipe Ingredients

3 pounds small red potatoes
3/4 pound green beans
1/2 small red onion, sliced
1/4 cup basil, chopped

Dressing
1/4 cup KRAFT Zesty Italian Dressing
2 tsp Grey Poupon Dijon Mustard
1/4 tsp salt
1/4 tsp pepper

Green Been Potato Salad Tip

The dressing can be made into larger portions and stored as well as the potatoes and green beans to cut prep time by more than half.

Green Bean and Potato Salad Recipe Directions

First boil the potatoes for 15 minutes or until soft. Cut the potatoes into 1 inch sections, either peeled or unpeeled. Steam the green beans for about 8 minutes and then combine with the potatoes, red onions, and basil. In a small bowl, mix the Kraft Italian dressing, Grey Poupon mustard, salt, and pepper and pour over the potatoes. Serve or store for a great lunch.
