I sometimes add zucchinis, bell peppers, and a few other vegetables to the potato salad just to mix my lunches. Hope everyone enjoys. Anne's Potato Salad Recipe Ingredients 3 pounds Russett potatoes
4 hard boiled eggs
3/4 cup Hellmann's® Reduced Fat Mayonnaise
1 tbsp GREY POUPON® Dijon Mustard
1/4 cup bacon bits
1/4 cup chopped parsley
6 cherry tomatoes, cut in halves

Anne's Potato Salad Recipe Directions
First boil the potatoes for 15-20 minutes until very soft before cutting into 1 inch cubes. Next cut the egg into 4 sections. In a large bowl combine the potatoes, eggs, and cherry tomatoes together and mix lightly. Finally, mix together the mayonnaise and mustard together and pour over the potatoes and mix some more. Sprinkle the parsley, bacon bits, and tomatoes over the mixture and refrigerate before serving for a great potato salad.
