Ground Turkey Salad Recipes

Grrr-round Turkey Salad

This recipe came from a friend of mine living in Arizona. She calls it an Arizona Turkey Salad, but I call it delicious. It’s a great alternative to ground beef. TIP: Don’t drain all of the juice once you're done grounding turkey to add a little moisture, almost like a dressing to your salad.

Ingredients:

  • 1 ¼ ground turkey

  • Lime wedges

  • 1 red onion, sliced

  • 2 tomatoes, sliced

  • 2 cups shredded lettuce

  • ½ tspn salt

  • 1 cup tomato salsa

  • 1 cup corn kernels

  • ¼ cup sour cream

Directions:

  • In large skillet, cook ground turkey and corn, stirring often to break up lumps of meat for about 5 minutes.

  • Drain off excess liquid.

  • Stir in 1/2 cup salsa and salt.

  • Divide lettuce evenly among 4 dinner plates.

  • Mound hot turkey mixture in center of lettuce.

  • Garnish with tomato slices, red onion slices and lime wedges.

  • Top each serving with 1 tablespoon sour cream.

  • Pass around remaining 1/2 cup salsa

Thai Ground-Turkey Salad

If you love Thai food, you’ll love this salad. It can be easy modified, exchanging the turkey for beef or pork, whichever you prefer. It can be made as a main course or a side dish for any occasion. TIP: Serve in cabbage bowls or regular bowls, layered with cabbage at the bottom.

Ingredients:

  • Bunch fresh cilantro

  • Bunch fresh parsley

  • Fresh mint

  • Small Head Green or White Cabbage

  • 1/2 lb of ground turkey

  • 3-4 tbsp Lemon Juice

  • 2 small shallots

  • 2 tbsp bread crumbs

  • 1-2 tbsp Asian Fish Sauce

Directions:

Chop 2 tbsp cilantro and 2 tbsp parsley and the shallots. Take apart some cabbage to make little bowls for the turkey mixture to go on, set aside...Take Turkey and lemon juice, stir together in a cold fry pan and cover with cold salted water.

Next bring the pan of turkey mixture to a simmer, cook until the turkey is done and not at all pink anymore. Strain and pour into a serving bowl. Combine shallots, herbs, fish sauce, and bread crumbs and more lemon juice to taste.
