Grilled Shrimp Salad

Sometimes chicken just isn’t enough. That’s when it’s time to call in the shrimp boat. Shrimp is perfect for salads as it gives it just enough of that ocean taste without being overpowering. TIP: Shrimp cooks quickly, so only grill it for approximately 3-5 minutes regardless of what type of grill you use. Red vinaigrette goes great with this salad.

Ingredients:

1/4 lb. shrimp
1 tsp. tarragon leaves
1 tsp. pepper
1 tbsp. Creole seasoning
2 heads butter lettuce
4 tbsp. chopped black olives
2 tbsp. croutons
2 tbsp. fresh parmesan shredded cheese

Directions:

Preheat grill to 450 degrees. Rinse shrimp and pat it dry. Next, season shrimp with tarragon, pepper, and Creole seasoning until seasoned well. Place shrimp on grill for a total of 5 minutes. Take shrimp off grill and let cool. Combine lettuce, black olives, croutons, and shredded cheese in large mixing bowl. Place mixture on two separate plates or bowls. Place shrimp on top of each salad and add dressing as desired.

Spicy Grilled Shrimp Salad

This shrimp salad is perfect for the one who wants a light, healthy snack before a big meal. The recipe is only for one serving, so if you have guests, double each ingredient. TIP: Add spinach leaves (as much as you’d like) to give it more of a ‘salad’ feel. The spinach compliments the other flavors.

Ingredients:

6 Shrimp
½ red bell pepper
½ green bell pepper
½ yellow bell pepper
2 slices red onion
¼ cup olive oil
½ lemon
½ cup chick peas
10 parsley leaves
chili flakes

Directions:

Cut the peppers in thin slices while grilling shrimp 4 to 5 minutes. Mix remaining ingredients in a bowl and lastly season with salt. Serve in a small round bowl, garnish with onion slices.
