A Delicious Grilled Salmon Salad

If you love fish and you love salad, this is the perfect dinner recipe. Invite your friends or family over and watch their hearts melt in the sea. TIP: I use a charcoal grill for all of my grilling to give my fish/meat that smoky flavor, but propane works just as well. Fresh salmon has always been the way to go for me.

Ingredients:

12 oz fresh or frozen salmon
6 cups fresh spinach
1 cup diced tomato
1 cup sliced green onion
1 cup diced pineapple
1 cup cheddar cheese
8 oz raspberry vinaigrette salad dressing

Directions:

Get grill nice and hot. Cut salmon in to 4 fillets and grill until done
wash spinach, and arrange on plate. On bed on spinach, arrange in a circle 1/4 cup tomato, 1/4 cup green onion, 1/4 cup pineapple, and 1/4 cup cheddar cheese. Place salmon fillet on top and serve with dressing on side.

Grilled Salmon with Grapefruit Salad

This delicious dinner IS the main course! The honey gives it just the right amount of sweetness and compliments the salmon like never before. TIP: Grapefruit is the fruit that the recipe calls for, but you can substitute it for pineapple or orange and still get the perfect taste.

Ingredients:

1/2 vanilla bean, cut lengthwise
Juice of 1 lemon
2 ruby red grapefruit, segmented, juice reserved
1/2 teaspoon honey
5 cups baby arugula
4 salmon fillets

Directions:

Get your grill nice and hot. Scrape vanilla seeds into a bowl. Add juices, honey, salt, pepper and 1/2 cup of the oil. Toss arugula with 3/4 of the dressing. Divide among 4 plates. Grill salmon skin side down 1 minute; turn. Season with salt and pepper. Cook fish for about 2 more minutes. Top each plate with salmon, remaining dressing and grapefruit.
