Carrot Salad Recipes

Making the right carrot salad has a lot to do with the type of carrot you choose. Organic carrots are rich in flavor and nutrients, but truthfully it’s up to you! TIP: Many traditional carrot salad recipes also call for crushed pineapple.

Ingredients:

3-4 cups freshly grated carrots
1/2-1 cup raisins
1 large apple, cored and chopped
1/3 cup mayonnaise

Directions:

Combine all ingredients in a medium sized bowl, serve and enjoy! Easy as 1-2-3.

Peanut, Orange and Carrot Salad

Enjoy this delicious dish as made by a famous TV chef. Bring this dish to a family BBQ or eat just as a snack throughout your day. TIP: Use chunky peanut butter instead of creamy and forget about the ¼ cup of chopped peanuts. Save money and chop-chop time.

Ingredients:

¼ cup peanut butter
3 tbsp tamari (dark soy sauce)
Juice of 1 orange
One, 1 in piece ginger, peeled and grated
One, 1 lb bag shredded carrots
1/4 cup chopped peanuts
4 scallions, thinly sliced
Salt and pepper

Directions:

In a medium microwaveable bowl, microwave the peanut butter for about 10 seconds to soften. Whisk in the tamari, orange juice and ginger; stir in a splash of hot water if the sauce begins to tighten up. Stir the carrots into the dressing and toss. Scatter the scallions and peanuts on the remaining salad; season to taste with salt and pepper.
