California Cobb Salad
Dressing:
Ingredients:
2 ½ cups red wine vinegar
½ cup worcestershire sauce
125 grams finely diced red onions
100 grams blue cheese crumbles
55 grams dijon mustard
35 grams kosher salt
10 grams black pepper
4 cups canola oil
Directions:
Combine the red wine vinegar, worcestershire sauce, red onions, blue cheese, dijon, salt, pepper in a food processor. Blend for 15 seconds. With the processor running, SLOWLY add the canola oil and continue to mix for 1 minute.
Yields ½ gallon.
The Salad:
Ingredients:
¾ cup diced tomatoes
68 grams blue cheese crumbles
22 grams real bacon bits
90 grams chopped hard boiled eggs
4 cups chopped (1” X 1”) romaine lettuce
4 cups chopped (1” X 1”) iceburg lettuce
1 avocado cut into small ½”cubes
4 fluid oz. California Cobb dressing
Directions:
Combine all of the ingredients, toss, and serve.
